Mechanism

Char sits past browning. Maillard reactions and caramelisation give sweetness and depth; pyrolysis โ€” the thermal breakdown of the food itself โ€” gives smoke, bitterness and a set of compounds nothing else produces. Used as a whole-surface treatment that is a mistake, but used in patches against unburnt food it reads as smoke and complexity rather than as burning. That contrast is the entire technique: a fajita pepper blistered black in spots against green flesh, a tortilla with dark freckles, an aubergine burnt entirely on the outside so the flesh inside tastes of smoke. It works because the bitter compounds stay concentrated at the surface while the flavour they contribute disperses. Charring also demands a dry surface and real heat โ€” food that is wet or on a moderate flame goes grey and steams long before it can blacken.

Success criteria

  • The smell turns smoky and slightly sweet; sharp and acrid means it has gone past useful.
  • Skins blister and lift away from the flesh underneath, which is what makes charred peppers peel.
  • It happens fast. Anything taking several minutes to char is not hot enough and is drying out instead.

Failure guards

The whole dish tastes bitter and burnt.
Charred uniformly rather than in patches. Char is a seasoning; at full coverage it is simply burnt food.
Vegetables went soft and grey without blackening.
Not enough heat, or a crowded pan. They released water and steamed; charring needs the surface dry and the pan ferocious.
Charred outside, raw inside, on something thick.
Correct for a pepper you are going to peel, wrong for anything eaten whole. Match the technique to whether the interior needs cooking.
