Why it happens

Root removed too early. Cut through the root only at the last stage.

Recovering it

Uneven dice is worth thirty seconds to fix before it goes anywhere near heat — go back over the large pieces. Once cooked, nothing recovers it. If the pieces have turned out coarser than intended, the usable adjustment is to cook them longer at lower heat so the interiors catch up, accepting that the exteriors will be softer than ideal.

The mechanism

A cube is the shape whose interior is furthest from its surface for a given size, so dice cook more slowly than slices of the same weight and much more slowly than mince. That is often the point — a diced onion in a soffritto should soften over ten minutes rather than disappear in two. Evenness is the real technique: cooking time is set by the largest piece, so a mixed dice means either raw large pieces or disintegrated small ones, and there is no moment when both are right. Size also controls how the ingredient reads on the palate. A fine dice distributes flavour and disappears into the background; a coarse dice stays identifiable as a distinct bite, which is why the same soup tastes rustic or refined depending only on how it was cut.
