¾ cupjaggery (grated)
3 tbspghee
1 tspfennel seed
½ tspcardamom (ground)
¼ cupdry coconut (finely grated)
½ cupwater
2 cupneutral oil, for frying

Method

    low heat, then cool until just warm
    jaggery + water, stirring only until the jaggery dissolves. Do not reduce it into syrup; concentrated syrup makes the dough brittle and the finished thekua hard rather than crisp.

    wide bowl
    whole-wheat flour + fennel + cardamom + coconut, then rub in ghee with fingertips until a squeezed handful briefly holds together. This shortening step limits gluten and gives the finished sweet its crumbly snap.

    add jaggery liquid gradually
    the flour mixture with enough warm jaggery liquid to form a stiff, cohesive dough. Stop adding liquid as soon as it can be pressed smooth; a soft dough spreads in the oil and absorbs fat.

    the stiff dough so the whole-wheat flour hydrates evenly. It should remain firm after resting; if surface cracks prevent shaping, wet fingertips rather than pouring in more liquid.

    the shaped thekua in neutral oil until deep golden on both sides and firm at the edges, turning as needed. If they brown in the first minute the oil is too hot; the dense center needs a slower fry. Drain and cool completely before judging crispness, because the crumb firms as steam escapes.
