Method
- knead5 minmasa, water in stages, to playdoughmasa harina + salt + warm water worked to a soft dough that neither cracks (too dry) nor sticks (too wet) — the playdough test is universal: a ball pressed flat should keep a clean edge; masa dries as it sits, so keep it under a damp towel and re-knead with wet hands as needed
- prep8 minballs, pressed to thick discsgolf-ball portions pressed to half-centimeter discs — THICK on purpose, three times a tortilla: the sope needs mass to be a boat; press between plastic sheets with a pan bottom if there is no tortilla press
- toast8 mindry comal, medium-high, both sidesdiscs on the dry griddle about 90 seconds a side, until speckled and set but not fully cooked through — par-cooked is the target; they finish in the fry, and this stage just makes them handleable for what comes next
