1 cuplong-grain rice
3 unitlarge onions, thinly sliced

Steps

    lentils partly tender but still firm at the center
    Simmer the lentils in water until they have softened outside but still resist slightly. They must retain enough structure to finish cooking with the rice rather than collapse first.

    Cook the sliced onions in olive oil over medium to medium-low heat, stirring increasingly often as they darken. This is the dominant flavor-building step, not a garnish preparation; take the onions well past pale gold without burning them.

    rice, lentils and seasonings evenly distributed
    Reserve some dark onions for the top, then combine the remaining onions with the partly cooked lentils, rice, cumin, salt, pepper and enough lentil liquid to cook the rice.
