1 cupcilantro (finely chopped)
1 cupscallions (finely chopped)
2 tbspdried fenugreek
2 cupcooked kidney beans
4 unitdried Persian limes
1 unitonion (chopped)

    Cook the chopped parsley, cilantro, scallions and fenugreek in a little oil until their raw moisture cooks away and the mixture darkens noticeably. This step concentrates the herbs; adding them raw to broth produces a thinner, grassier stew.

    Brown the onion and meat with turmeric in the stew pot. Develop some color without burning the turmeric, then scrape up the fond when liquid is added.

    gentle simmer, meat mostly tender
    Add the cooked herb mixture and water, pierce the dried limes and add them, then simmer gently until the meat approaches tenderness. Keep the limes intact enough that their aromatic sourness infuses gradually rather than releasing excessive bitter pith.

    Add the cooked kidney beans and continue until the meat is fully tender and the stew darkens and thickens naturally. Avoid aggressive reduction that dries the herbs before the meat is soft.
