Steps
- sear8 minpork browned and crumblyBrown the ground pork until its moisture cooks away and the small pieces begin to crisp, then stir in the preserved mustard greens. A dry, savory topping gives contrast; pale steamed pork disappears into the noodles.
- mix4 minsmooth concentrated sauceMix chile oil, sesame paste, soy sauce, black vinegar and Sichuan pepper until smooth. Taste it undiluted: it should seem intense because hot noodles and a little cooking water will spread that seasoning across the bowl.
- boil6 minnoodles just tenderBoil the noodles until just tender and reserve some cooking water before draining. Do not rinse; surface starch helps the concentrated sauce cling.
- mix2 minsauce glossy and coating every noodlePut sauce in each serving bowl, loosen with a spoonful of hot noodle water, then add noodles and toss vigorously. Add water sparingly: dan dan noodles should be slick and saucy, not swimming.
