| ½ tsp | turmeric |
| 1 tsp | salt |
| 2 tbsp | ghee |
| 1 tsp | cumin (seeds) |
| 3 clove | garlic (sliced) |
| ½ cup | onion (diced) |
| ½ cup | tomato (diced) |
| 2 unit | chili, red pepper (dried, whole) |
| 1 tsp | ginger (grated)optional |

Method
- boil20 mincovered, skimminglentils + water + turmeric + salt, until the lentils collapse and no longer hold their shape
- saute4 minmedium-highghee + cumin seeds until the seeds pop and darken, then + garlic + dried chili for thirty seconds — burnt cumin is bitter and cannot be rescued
- saute5 minmedium+ onion + tomato + optionals, until the tomato breaks down entirely = tadka
- mix1 mintadka poured over the dal, stirred once so it streaks rather than disappears
