3 cupcooked potatoes (cold, roughly mashed)
2 cupcooked cabbage (chopped and squeezed dry)
1 unityellow onion (finely chopped)
2 tbspbutter
½ tspsalt
¼ tspblack pepper

Method

    onion softened
    Soften the onion in half the butter without heavy browning. Starting with tender onion prevents raw pieces from interrupting the otherwise cohesive potato cake.
  2. mix2 min
    vegetables evenly distributed
    Fold cold potato, well-drained cabbage, salt and pepper together. Keep some potato texture; beating it smooth makes the mixture gluey.
  3. fry8 min
    deep golden crust underneath
    Press the mixture firmly into the skillet with the remaining butter and leave it alone long enough to build a real crust. Frequent stirring produces hash instead of bubble and squeak.
  4. fry6 min
    second side browned and center hot
    Turn in sections or invert the cake and brown the other side. Moderate heat gives the interior time to heat before the crust burns.
