1 lbbeef (sirloin, sliced thin across the grain)
10 ozmushrooms (cremini, thickly sliced)
1 unitonion (finely sliced)
3 tbspbutter
1 ½ tbspflour
1 ¼ cupbeef stock
cupcream (sour, at room temperature)
1 ½ tspmustard (Dijon)
8 ozpasta (egg noodles)
1 tspsalt
½ tspblack pepper (ground)
2 tbspbrandy (to deglaze)optional

Method

    beef firmed 15 minutes in the freezer, then cut across the grain into thin strips
    beef sliced thin, and mushrooms cut thick. Chilling the beef briefly makes thin slicing possible. Across the grain is not optional even in a tender cut — it shortens the fibres so they yield immediately, and the strips are seared so briefly that nothing else will tenderise them

    1 tbsp butter, very hot pan, beef in two batches, dried and salted, 45 seconds a side
    beef seared hard and fast, then removed to a plate while still rare in the middle. It finishes in the sauce for less than a minute at the end. Two batches, always: the strips release moisture instantly, and crowded they boil in it. Dry them first — the surface must be dry to brown at all

    1 tbsp butter, high, mushrooms in one layer and left to brown before stirring
    + mushrooms, undisturbed until browned, then + onion until soft. Mushrooms are around ninety percent water and must have room and heat to drive it off. Crowd them and they simmer in their own liquid and go grey and squeaky — the browning is where the dish's depth comes from, and it cannot be added later

    brandy or wine in, scraped hard, reduced almost dry
    (+ brandy or white wine), scraping the browned residue off the pan base. That residue is concentrated Maillard product from the beef and mushrooms — the single most flavourful thing in the pan, and it comes off with liquid and a wooden spoon

    remaining butter and flour cooked 1 minute, then stock added gradually
    + butter + flour cooked a minute to a blond roux, then + beef stock a little at a time, whisked smooth and simmered until it coats a spoon. Cook the flour before the liquid arrives or the sauce tastes pasty; add the stock gradually or it lumps

    OFF the heat, a ladle of hot sauce stirred into the sour cream first, then combined
    + sour cream tempered — stir a ladle of the hot sauce into the room-temperature sour cream, then pour that back. Sour cream is an acidified emulsion, and dropping it cold into a simmering pan curdles it: the casein proteins clump and the sauce goes grainy. Bringing it up in stages, off the heat, is the whole trick. It must never boil again after this
