Steps

    Divide the base oats, milk, yogurt, chia, honey, salt and vanilla between two jars and stir until no dry oats remain. Keep the banana separate until serving.

    overnight while the oats' starches hydrate cold and the chia builds its gel — this is the cooking, just without heat; at four hours the texture is chalky in the middle, at eight it is custard, and it holds for three days

    In the morning, stir the chilled oats and loosen with a splash of milk if needed. Divide the listed freshly sliced banana between the two jars just before serving.
