3 tbspají panca paste
cupred wine vinegar
4 clovegarlic (finely grated)
1 tspground cumin
1 tspdried oregano
3 tbspneutral oil

    all membrane, vessels and firm connective tissue removed; heart in even 1 1/2-inch pieces
    Trim the heart aggressively before cutting it into even pieces. Any silver skin or tough vessel left behind stays chewy no matter how accurately the meat itself is cooked.

    refrigerated; every piece coated but not swimming in acid
    Mix ají panca, vinegar, garlic, cumin, oregano, half the oil, salt and pepper, then coat the heart and refrigerate for two hours. The marinade seasons the lean meat, but extending a strong vinegar soak indefinitely can make the exterior mealy before the center is seasoned.

    Thread the heart onto skewers without compressing the pieces together. Small gaps expose more surface to the fire and help each face brown instead of trapping steam between pieces.

    Grill over intense heat, turning once or twice and brushing lightly with the remaining oil. Heart is extremely lean: once it has browned and lost its raw center, continued cooking rapidly changes tenderness into toughness.
