Mechanism

When food browns in a pan, some of the Maillard products โ€” the aromatic compounds created by the reaction between amino acids and sugars โ€” polymerise and stick to the metal as a dark layer called fond. Most of them are water-soluble, so they dissolve readily the moment liquid arrives and heat helps them let go. What looks like a pan needing to be scrubbed is in fact the most concentrated flavour in the dish. Any liquid works โ€” wine, stock, water, even the water clinging to vegetables โ€” because the mechanism is solubility rather than acidity. Alcohol contributes a little extra by dissolving some aromatic compounds that water alone will not, but it is not the reason the technique works.

Success criteria

  • The pan hisses hard and throws steam the instant the liquid lands โ€” that is the temperature difference doing the work.
  • The base changes colour visibly as it lifts, going from dark brown to bare metal under the spoon.
  • The liquid darkens within seconds. If it stays pale, there was no fond to speak of.
  • A wooden spoon meets almost no resistance. If you are scraping hard, the residue is carbon rather than fond.

Failure guards

The liquid stays pale and the sauce tastes thin.
Nothing browned in the first place. Fond is made by searing or roasting; a pan that only steamed has nothing stuck to it.
The sauce is bitter.
The residue was burnt rather than browned. Black fond is carbonised and dissolves into bitterness โ€” it should be discarded, not deglazed.
Harsh, raw alcohol flavour in the finished dish.
Wine or spirits added and not cooked down. Ethanol boils at 78ยฐC so this is quick, but stopping short leaves an edge that sits on top of everything else.
