Mechanism
Microbes need available water, and salt makes water unavailable โ it binds water molecules and creates an osmotic gradient that pulls moisture out of both the food and any bacterium in it. That measure, water activity, is what determines shelf stability rather than moisture content as such. Sugar does the same thing more gently and offsets salt's harshness. Nitrite, in the pink curing salts used for charcuterie, does something salt cannot: it specifically inhibits Clostridium botulinum, which tolerates the low-oxygen environment inside a cured sausage or ham. That is why nitrite is not optional in those preparations and why it is also strictly dose-limited โ it is genuinely dangerous in excess, which is the reason it comes dyed pink and must never be treated as interchangeable with ordinary salt. A short cure, like salting a steak for an hour, uses the same mechanism for seasoning rather than preservation.

Failure guards
Unpleasantly salty all the way through.
Too much salt for the weight, or left too long. Long cures are calculated as a percentage of the food's weight, not measured by eye.
The exterior hardened into a shell while the inside stayed wet.
Case hardening โ dried too fast in air that was too dry or too warm. Moisture from the centre cannot get out through it.
Off smells, or slime.
Insufficient salt, too warm, or a break in the cure. This is discarded, not trimmed.
