When it goes wrong · Slice

Onions dissolve into shreds instead of holding their shape.

Can you save it?

Reviewed for this symptom

Let them go and use it — onion that has melted to nothing is the base of a good sauce or soup. If shape matters for this dish, cook a fresh onion cut pole to pole for the last ten minutes and stir it through.

What actually happened

Only this symptom

Cut across the grain into rings. Pole to pole holds together through long cooking.

The full mechanism

Shared by every slice failure

Two variables do the work. Thickness sets cooking time, because heat travels from the surface inward and the centre is the last place it reaches — halving the thickness roughly quarters the time to heat the middle, so evenness of thickness matters more than the number itself. Direction matters when the food has grain. Meat is bundles of long muscle fibres held in connective tissue; slicing across them shortens each fibre to a few millimetres so the teeth part them easily, while slicing along leaves fibres the full length of the piece and the same meat eats tough. Onions have grain too: cut pole to pole the pieces follow the cell structure and hold together, cut across the equator the cells rupture and the pieces collapse and release more of the sulphur compounds that sting.

Prevent this specific failure

Cut pole to pole, along the grain, for anything that cooks long or needs to hold its shape; rings and equator cuts are for quick cooking and raw use.

What right looks like

Shared by every slice failure

  • The knife does the work under its own weight with a long drawing stroke — pressing straight down crushes rather than cuts.
  • Grain in meat shows as fine parallel lines on the surface; the cut runs perpendicular to them.
  • Pieces of even thickness finish together. If some are done and some are not, the cutting was uneven, not the cooking.
  • A flat, stable face on the board first — a rolling item is how people cut themselves.
