When it goes wrong · Cure
The exterior hardened into a shell while the inside stayed wet.
Can you save it?
Reviewed for this symptom
Vacuum-seal or wrap it tightly and refrigerate for a week so the moisture equalises from the centre outward; then continue drying in a cooler, more humid space.
Safety boundary: A wet centre inside a hard shell has not reached a safe water activity; it is not shelf-stable until it has.
How to confirm the diagnosis
Observable cues, not inferred user state
- A hard, dark rind over a soft, wet centre
- The drying space was warm or very dry
- Weight loss stalled early
Not this?
What actually happened
Only this symptom
Case hardening — dried too fast in air that was too dry or too warm. Moisture from the centre cannot get out through it.
The full mechanism
Shared by every cure failure
Microbes need available water, and salt makes water unavailable — it binds water molecules and creates an osmotic gradient that pulls moisture out of both the food and any bacterium in it. That measure, water activity, is what determines shelf stability rather than moisture content as such. Sugar does the same thing more gently and offsets salt's harshness. Nitrite, in the pink curing salts used for charcuterie, does something salt cannot: it specifically inhibits Clostridium botulinum, which tolerates the low-oxygen environment inside a cured sausage or ham. That is why nitrite is not optional in those preparations and why it is also strictly dose-limited — it is genuinely dangerous in excess, which is the reason it comes dyed pink and must never be treated as interchangeable with ordinary salt. A short cure, like salting a steak for an hour, uses the same mechanism for seasoning rather than preservation.

Prevent this specific failure
Dry cool and humid — around 12–15°C and 70% humidity — with gentle airflow, never warm and dry.
What right looks like
Shared by every cure failure
- The surface goes from wet to tacky and finally firm as water leaves and proteins concentrate.
- Weight loss is the real measure for a long cure — a target percentage lost, not a number of days.
- The colour deepens and, with nitrite, sets to a stable pink rather than turning grey on cooking.
- A short dry cure draws visible moisture out within twenty minutes and reabsorbs it over the following hours.
