Method
- poach4 minsalted water, bare shiver, never boilingshrimp + salt + water until just opaque at the thickest point, then straight into cold water — a rolling boil contracts the muscle fibers hard, wringing out water and leaving a rubbery comma that won't lie flat in a roll
- slice3 minknife parallel to the boardcooled shrimp split through the horizontal plane into two flat halves each, so the cut face shows a clean pink stripe through the translucent wrapper — this is the only decoration the roll gets
- boil3 minhard boil, then rinse cold until the water runs clearrice vermicelli until slippery-tender, then rinse and drain thoroughly; surface starch left on the strands sets as they cool and welds the whole tangle into one brick you cannot portion
