1 cupsweetened red beans
1 cupsweetened jackfruit
1 cupnata de coco
1 cupcoconut gel or jelly
4 unitube ice cream

Steps

    all toppings cold and drained
    Chill the serving glasses and portion the sweet beans, jackfruit, nata de coco and jelly. Drain excess packing syrup so the final dessert is sweet but not flooded before milk is added.

    Divide the sweet components among the bottoms of four tall glasses, varying their placement rather than blending them together. The dessert is designed to reveal different textures as the diner mixes downward.

    Pack shaved ice over the fillings and pour evaporated milk slowly over each glass. Fine shaved ice absorbs milk while remaining spoonable; large hard cubes do not create the same texture.
